Grandmas Rice Dressing

This is one of my childhood favorites. I remember it was what grandma brought would bring to family things on the holidays.

Rice Dressing

Ingredients:

2 cup rice ( dry measure. )
1 onion – chopped fine
1/2 cup chopped parsley
1/2 stalk chopped celery
1 lb ground beef ( browned into small bits )
1/2 cup chopped whole tomatoes ( canned )
3-4 hard boiled eggs – chopped
Garlic ( to taste )
Provolone cheese ( to taste )

Instructions:

First cook the rice as you normally would cook rice. Next in a separate pan saute the onion, celery and parsley in butter and salt to the desired level. Brown the meet and mash into little bits. Combine everything and mix well add garlic and provolone to taste. Keep warm until ready to serve. I’ve found it works best to keep it on simmer heat for a while to heat everything back up evenly. If you have your timing down right you can probably pull this off in just one pan. I think that’s how my mom does it.
